
Blue Pools are Pacific oysters grown in tumble bags that rise and fall with each change in tide. Tumbling prunes the oysters into the perfect, easy-to-shuck half-shell shape, with a flat top shell and a pronounced deep cup. Unlike our beach grown oysters, Blue Pools spend a majority of their time underwater feeding, and are ready for harvest after 12 to 18 months in the tumble farm. Our tumble farm is close enough to the river delta to give the Blue Pools the clean taste we strive for, but far enough from the fresh water to raise the salinity in the liquor and help balance the sweet finish. They have a crunchy texture and more pronounced vegetable aftertaste than we find in a Hama Hama. We have been selling Blue Pools since January, 2011.
